Why do we not have ingredients like these in our cabinets, but it is in nearly everything we buy from the store?

- Carob bean gum
- Xantham gum
These are binding-agents to prevent the food from separating (similar to lecithins, which are surfactants and emulsifiers) while the food is being transported and stored in refrigerators, on the way to your home.
Are they completely inert?
No! Some are plant derived, others are byproducts of fermentation from specific bacteria.
