Direct sewing is your friend as things warm up. Most of what you listed with exception of the fennel which needs a longer seedling stage. Skip the repotting and transplanting whenever possible to save time and effort.

Yes to ginger and turmeric—but don’t expect it to over-winter. Pre-sprout, then plant in shallow trenches and hill periodically as shoots emerge.
