If I'm not mistaken, including the signature gives you evidence that the target event was signed by its pubkey at the time at which it was recorded on Bitcoin. Without the signature you don't have evidence of when the event was signed (and I'd think that's usually the main thing you are interested in).

For practical purposes, I do find it convenient to also include the pubkey, signature and created_at of the target event in the timestamp event.
