Daniel, no pleb is ever going to build what you're talking about, this is pioneer Territory.

Nunya, don't sleep on Osage Orange for the hedge rows. It copices/pollards and it is what was used before barbed wire was inventes. There is a black and white video online showing how to do it. It was called "hog tight, bull strong and horse high" plus sheep and cattle loves the leaves and the thorns protect little birds. Would also recommend red cedar because it adds a wind break effect which I don't know if you've accounted for in your plans.

Don't take this the wrong way, but this plan seems a little like mental masturbation until you take into account 2 things, the economics and the time aspect of it. I had a similar idea 5 years ago which I refered to as the 3D land lease where a different layer of the canopy would be leased and the grazing/cropping lanes would be leased differently. The main problem with these is people. Community building is difficult. For that I would recommend reading "permaculture thorns" by Paul Wheaton apidcast between the 2 of you would be super interesting as well.

Last thing, you mentioned something about on the initial pass each acre only being grazed once that first year. That won't work. To achieve the mob grazing affect you're talking about each paddock needs to be hit every 30-90 days, otherwise you're going to have to mow/brush hog/hay because everything will go to seed and have severely dimmunished nutritional value and give your cows pink eye. Small change, but likely just means that the initial her you're talking about need to be sized accordingly OR you have 2 herds working from each end. Making the herd a flers with sheep would probably be an interesting exploration but it adds additional labor because then you'll likely need 2 or 3 wires, however they're much more efficient at converting plants into meat and need dramatically less water.
